I meant to share this lovely guacamole recipe the other day, but here it is for you all today! : )
1 Small-Medium garden Tomato chopped (or enough grape tomatoes to equal such)
1/2 Red Onion chopped
1 Garlic Clove minced
A few squeezes of Lemon or Lime juice (whatever you have on hand..I like to use a little bit of both)
*optional chopped cilantro (Sorry kids, I usually omit this because I am one of the people in this
world who can not tolerate the taste of cilantro, but if you like it by all
means add it!)
Mash the Avocado up with a fork. Then, mix in all the vegetable ingredients and add the juice(s.) Enjoy!
Avocados are high in monounsaturated fats, which contain oleic acid; oleic acid can lower the risk of breast cancer. They also contain vitamins C, E, B6, Folate, Iron, Magnesium and Potassium. Finally they have beta-sitosterol in them, which is an antioxidant plant chemical that can help lower blood cholesterol (100 Best Health Foods, p. 12!) Now aren't Avocados even more delicious sounding? ; )
