1 cup Cashews
8 pitted Dates (soaked in water for at least 4 hours)
1 Tsp Peppermint Extract
2 Tbsp Agave Nectar
2 Tbsp + 1 Tsp Raw Cacao Powder
Additional Cacao Powder (or just regular Cocoa Powder) and Ground Candy Canes for
rolling the truffles in.
Blend everything in a food processor or similar device. Shape into round balls and then roll in your choice of cacao powder or ground candy canes.
