1 and 1/2 Cups Cannelloni Beans
1/2 Cup Chickpeas
1 Cup Chopped and Steam-Cooked Sweet Potato*
1 Cup Chopped and Steam-Cooked Beets*
2 TBSP Tahini Paste
2 TSP Maple Syrup
1/4 Cup Spelt Flour
1 TBSP Finely Chopped Fresh Parsley

Topping Suggestions: Cucumber, Scallions, Grape Tomatoes, Kale, Horseradish Hummus
Chop Sweet Potatoes (about 1 and half sweet potatoes) and Beets (about 2 beets.) Steam for 15-20 minutes, until cooked through. Combine Cannelloni Beans and Chickpeas in large bowl. Add steamed Sweet Potatoes and Beets. Add remaining ingredients and mash together. Form into small patties for sliders or larger if you prefer. Bake on 350 degrees for 25 minutes, flipping sliders half-way. Toast your favorite bread (sprout bread, multi-grain or a roll, whatever you prefer.) Spread optional hummus (I used Trader Joe's Horseradish Hummus) on one side; top with sliced Scallions. Top the other side with Baby Kale, followed by your slider, Cucumber slices, and Grape Tomato slices. Devour all this delciousness and feel energized and awesome after! < 3

1 Large Sweet Potato, peeled and grated
3 Green Onions chopped
3 Egg Whites
1 oz. Light Cheddar Cheese
1 TSP Maple Syrup
Heat pan with Coconut Oil Cooking Spray or other cooking spray and cook grated Sweet Potato and chopped Green Onion until softened. Next form two nests in the pan, leaving the center open. Pour half the egg whites in the center of each nest. Flip when half-way cooked, to cook egg whites all the way through. Meanwhile melt Light Cheddar Cheese in microwave-safe bowl with Maple Syrup. Top each Nest with cheese mixture. Enjoy with a slice of your favorite toast, grape tomatoes, and a piece of fruit for a great start to your day, or for the perfect homemade brunch delight, or to refuel after your morning workout! : )
