Look at that name; it pretty much screams, "Hey, I'm a cool dude grain!" Really though, there are numerous reason why quinoa is such an awesome food, but I'm going to list just seven that I have come across.
1. It's rich in PROTEIN; it is a complete protein containing all nine essential amino acids, including Lysine (essential for tissue growth and repair,) which makes the protein levels in quinoa comparable to that in milk. (Mooo-ve over Mr. Cow. Had to, Ha.)
2. Contains TWICE as much FIBER as most other grains. Yup, totally a sweet gift for grandma or that girl down the street with the caked on make-up, who claims, "She doesn't poop; girls don't poop." You should be highly concerned about her and feed her some quinoa because it can help relieve her apparent life long constipation. #shithappens On a more serious note, fiber helps lower cholesterol and glucose levels. And, wait it gets better; it reduces blood pressure, helping to prevent heart disease.
3. Contains IRON; which keeps our red blood cells healthy and happy (I added that "happy" research in. ; ) It is also the basis for hemoglobin formation. Iron aids in neurotransmitter synthesis, regulations of body temperature, enzyme activity and energy metabolism. (Again, Mooo-ve over Bessie.) Perfect Iron source for Vegans and Vegetarians, and everyone else who doesn't want to eat Bessie.
4. Reduces Migraines; high in RIBOFLAVIN (Vitamin B2,) which improves energy metabolism within the brain and muscle cells, also promoting blood vessel expansion in the brain and reduces the instances of migraine headaches. Also, high in MAGNESIUM, which aides in the formation of healthy bones and teeth, as well as relaxing blood vessels to alleviate migraines.
5. High in MANGANESE, an ANTIOXIDANT, which helps to prevent damage to the mitochondria during energy production and protects red blood cells from injury from free radicals.
6. It's GLUTEN-FREE, it's a great grain option for those that suffer from Celiac disease or gluten intolerance.

1/4 Cup Precooked Quinoa
1/2 Cup Oats
3/4 Cup Unsweetened Vanilla Almond Milk
1 and half-2 TSP Maple Syrup (Depending on how sweet of a person you are. Ha.)
*Optional 1 TBSP Raw Unsweetened Coconut Flakes
1/4 TSP Ground Cinnamon
Walnuts for Garnish
Mix together the Quinoa, Oats, Almond Milk, Maple Syrup and any optional ingredients. Store in air tight container in the refrigerator overnight. And, enjoy all that deliciousness in the AM!
